Pumpkin Chocolate Chip Muffins




Ingredients
1 (15 ounce) can pumpkin puree
4 eggs
1/2 c applesauce
1/2 c oil
2/3 cup water
1 c white sugar
1 c brown sugar
3 1/2 cups all-purpose flour
2 teaspoons baking soda
1 1/2 teaspoons salt
1 1/2 tbsp Pumpkin Pie Spice
1 c mini chocolate chips


Directions
Preheat oven to 350 degrees F. Grease and flour muffin pan.

In a large bowl, mix together pumpkin puree, eggs, oil, water and sugar until well blended. In a separate bowl, whisk together the flour, baking soda, salt, and spices. Stir the dry ingredients into the pumpkin mixture until just blended. Pour into the prepared pan.

Bake for about 25 minutes in the preheated oven. Muffins are done when toothpick inserted in center comes out clean.

Makes 24 Muffins.
